hey fate;
i"am so sorry as you know i"am in catering businenn so i was so busy as it was our kopti chrismass yesterday i just opend my mail today , any way let"s start with koshary :
you will need :

* black lentill  one glass
* white egyptian rice one glass
* egyptian small pasta noodells " shearya " 50 gm
* small pasta rounds 150 gm
* one large onions
* 3 large garlic gloves
* 3 tb spoon viniger
* 3 tomatos " in the blender "
* one tb spoon tomato paste
* corn oil for for cooking
* sunflower oil for fring onions
* salt , cumon , red chillis
now
first you will boill black lntill" don"t add anything to the water" till cooked & put aside
boill small pasta rounds in water till cooked add some salt & oil to the water & put aside
fry egyptian noodells in some corn oil and add washed white rice , fry together for a few seconds then add boiling water "one glass water for each glass rice " some very littel extra water for the extra noodells , add suitable amount of salt and cover .. after boilied turn to low heat after all water obserbed turn to very low heat and leave till cooked
fry minced garlic in some corn oil when yelow add viniger just boil add blended tomatos & tomato past , salt , cumon & chillies " to taste " cook well " enough to make a nice sauce "
and remove from heat
chop onion and deep fry in sunflower oil till red remove from oil on kitchen paper " leave for a while to get"t crunchy "
you first put rice then black lentill then pasta then tomato sauce and fried onions on top
have a nice meal

hey again fate ;
for taamia you will need
* egyptian beans peeld & in halfs " foul deshish "
* onion & garlic
* leeks " green parts more than white parts "
* green corinder 
* corinder seeds " blended"
* salt , cummon , chillis
* bicarbonat sodiuom

first soke beans over night
drain beans and sprinkl on top some of the bicarbonate and leave aside for till you chop onions, garlic, green corinder and leeks
and mix all together with the beans blend them in food proccesor till very soft dough "don"t do it in a blender as you have to make sure it git some air inside the dough " after finish you season with some salt , chillis, cummo , dried coorinder
mix again
to fry you need sunflower oil as you have to do"t in a very deep frying
make them in small boals then flat the boals sprinkle with some dried coorinder then fry in hot oil , remove on a kitchen papers to get rid of extra oil
serve with orintal salad & tehina salad
